Yep, sure that changes on database or server side are needed. This commits are based on the #259 PR.

Is there any chance that this could be done? @Gargron More people are on the same situation as my instance, as noted on #285 issue

@Gargron what about having an empty fallback that helps with categorisation?

So you select "science" which doesn't yet have any servers in it on the backend, and we amend the message here to say "Seems like there are currently no servers that fit your search criteria. Mind that we only display a curated set of servers that currently accept new sign-ups. If you know of a server that follows the Mastodon Server Covenant that should be added here, let us know"
