Feature summary

Update Viash to Scala 3

Feature description

Most of the code is backwards compatible, biggest exception is anything to do with reflection, ie. json_schema (and others) exports

Why is this feature beneficial?

It would enable us to do more powerful reflections, e.g. getting (correct) default values.
