Tested the is_mounted as function approach and it worked very well for me. So here's the PR.
With this PR we check actual mounts 1) at start, 2) when open window from tray, 3) on refresh button, 4) on vault's popup and update the table and menus accordingly. There's also a new "View" menu in main window with "Refresh" option to re-check the mounts.
