Update the support matrix for external snapshotter #603

The two latest releases are missing from the matrix. The information for this PR is gathered from the releases section of external-snapshotter project.

It was noticed from in this issue and fixes it.

I think these kinds of updates could be automated in the future as it is quite boring work 😄
Also seems many projects are lagging behind in these compatibility matrices under this documentation

v7.0.0 was released in January this year: https://github.com/kubernetes-csi/external-snapshotter/releases/tag/v7.0.0. So we need to support 7.0.x until Jan next year.
