Capacitor 7 drops Xcode 15 support, so set actions to use Xcode 16, which requires macos-15 as Xcode 16 was removed from macos-14.
Also update the
verify:iosscripts to use-destination generic/platform=iOSinstead of specific SDK versions and devices that change every year
