🎫 Issue IBX-8470

Description:

This PR bumps Symfony to v6 with some cleanup changes.

Key changes:

  • Bumped Symfony packages requirements to ^6.4
  • [Composer] Dropped obsolete authors section - I don't see this in current templates, so decided to drop it rather than updating
  • [Git] Updated .gitignore with composer-generated structure

QA:

No QA required.

Documentation:

No documentation required.
