Reviewed and tested. Going live to the app store, but noting the following:

• Sphinx relay in general seems to be quite flaky (not umbrelOS related) and there can be long periods of time where connection to the relay from a client is not possible.
• The Sphinx project is not looking very active across the relay repo and various client app repos
• The latest Sphinx Relay release at https://github.com/stakwork/sphinx-relay/releases is v2.5.3, but there is no equivalent Docker tag at https://hub.docker.com/r/sphinxlightning/sphinx-relay/tags. The latest Docker tag is v2.5.2
