This PR makes three improvements to the tools.plot.plot_projected_elastic_properties() function:

Vectors are now drawn to show the directions of particle motion in Vs plots.
Minimum and maximum Poisson ratios are added as additional plotting options, with vectors representing the lateral directions.
Where both VS1 and VS2 or Minimum and Maximum Poisson ratios are plotted together, the colourbar takes vmin/vmax from the combined range of values.
