Mac x64 build fails on macos-13 due to this issue: actions/runner-images#7522 - so have switched to macos-12 for now. However, macos-12 will be unsupported soon: actions/runner-images#10721
Also added "mac" in the filename of the .dmg, so it's more obvious what it is for when uploaded to the Releases page.
