[DOCS][OAS] Add data view swap saved object references and preview APIs

Summary

Relates to #137240, #175183

This PR:

• adds the swap references and swap references preview to the OpenAPI document
• adds some missing details from https://www.elastic.co/guide/en/kibana/master/data-views-api-create.html#data-views-api-properties
• removes the "technical preview" qualifier from the data view APIs in both sets of documentation
• removes the /s/<spaceid>/ version of the paths from the openAPI document, since per discussions elsewhere we'll cover that in an introductory page rather than repeat for every endpoint
