Update documentation for release 1.1.0

This is in progress. Need to think in particular about the roadmap for 1.2.0.

For the roadmap 1.2.0, I think those generic statements are ok. I would expect that the next month will be fixing any bugs that pop up after launch, putting in place monitoring in the JHU AWS env, and working on JHU CI/CD features.

We will be making some changes in deposit services: updating NIHMS package schema and adding SFTP transport.

We will also be changing grant-loader to use fibi (but this is specific to JHU). There may be some UI changes too that will benefit the community release.

@rpoet-jh Good points. I ended up just bumping that language for 1.2.0 to the next version and including things about fibi and nihms. Let's see what folks think.
