I'm curious as to why Subchapter 1.2 is nested inside Subchapter 1.1 instead of appearing at the same hierarchical level (i.e. as a sibling level)?

Great spot. That was an oversight on my part, quite literally, I couldn't differentiate the levels. I have added a new commit to correct each of the three book examples. I'll submit for re-review to get the thumbs up before merging.

This commit introduces a number of customStructmap example transfers for reference and testing. These structMaps are inline with the feature as is being refurbished/introduced into Archivematica 1.10.

This commit adds a number of custom structMap examples to the
Archivematica sample-data to demonstrate the different
configurations of the feature for future users, and testing
purposes.

cc. @peterVG If you spot any enhancements we can make to improve these samples for users and what they're doing, we can probably make those changes in this branch as well.
