Update naming from InferGPT to InferESG

Since the idea of this ticket was originally a readme tidy up but that seems to look ok. I did notice something in env.example that confused me a bit.
At the bottom the but under # llm config is suppose to be the brand of llm eg openAI or mistral
and the bit under # llm model is suppose to be the specific openAI / mistral model
can we change the comments to be # llm and # model or something like that?
