feat(replay-templates): minor improvements

Problem

1. Zach suggested we should use the activity score as a template, which I thought was a good idea
2. If someone unset a var, they could still submit, which isn't correct
3. I want an actual custom event for this so we know what template people are using, and because not every template uses the "apply filters" button which is what we are currently using in autocapture

Changes

Fixes the above
