chore: update gunicorn config and add logging

Update gunicorn config with debug mode on, to debug worker issue in deployment.

@joshuagraber In this case, we may be able to modify the run parameters in digital ocean's app spec to do this, rather than making a change -- indeed, that's what I tried to do with --log-level debug and --timeout 90 (neither of which yielded anything of note).

Might save us a pull request.
