nixos/release: nfs3 -> nfs4 in all tested sets

Description of changes

This should unblock channels and hopefully reduce the impact of NFSv3 tests seemingly breaking any time we update the default kernel. If anyone wants to maintain NFSv3 specifically, please speak up now or forever hold your peace.
