Updates the AWS EKS module to v18.x.x. This is a major update with breaking changes from the source AWS EKS module. They refactored the entire module and now we are left with a bad update scenario here.
It is best to create a new EKS cluster if possible but if you have to or want to migrate forward, you will have to follow their update notes: terraform-aws-modules/terraform-aws-eks#1744
