How are the tests organized?

At the top level, there are two test suites: EPUB3 and Accessibility. Each test suite contains several categories. Each category contains several features. Features, in turn, contain tests.

How can I tell if a reading system supports XYZ feature?

Go under "Features" and find the feature. Click on it and see a breakdown of how each reading system performed on the tests associated with that feature.

What does "Not Tested" mean?

The tests in that category have not been performed. It is not an indication of the reading system's capabilities.

What are the different columns in tables on the evaluations pages?

On both http://epubtest.org/testsuite/epub3/ and http://epubtest.org/testsuite/accessibility/, there are tables listing reading systems and percentages. Each column with a percentage represents a broad category of test material. The percentage is the number of tests passed vs the total number of tests in that category.
