My suggestion would be to try out Apertium if you are interested in Linguistics(really friendly org). If you are not able to dedicate more time, its good to proceed with org on according to your current skill set. Carefully choosing one org and proceeding with it would enhance your skill as well as increase your chance for GSoC :)
