I seperated the services into different containers, and made a container stack. I also updated grafana to latest, and influxdb to 2.7.3. Cronograf was brough inhouse by influx, so it is no longer a third thing to add.
This simplified the dockerfile a ton, but now influxdb2 relies on tokens and flux language which is a little more complicated
