- Upgrade to Rails 8.0
- Switch to Solid stack (queue, cable, cache)
- Remove redis dependency

* Update new to new default config values * Upgrade gems to rails 8 compatible versions * Re-organize docker images based on rails 8 template, reducing final image size by >2x
