Interest in moving to Gradle

Summary

To mirror the other extensions and make development easier I was wondering if there would be interest in moving this project to Gradle. This would allow us to reuse the gradle-wiremock-extension-plugins and prepare us to deploy to the org.wiremock.extensions namespace.
