refactor: remove array of contributor name and contributions

just include the total number of contributors E.g. contributors: 90

Amend:

• code to generate the api in this repository
• clean up all old data in https://github.com/webuildsg/data/tree/gh-pages/data/repos/v1 so stored data will be significantly reduced in size
