feature: refactor vite example

Describe the feature

Refactor the SDK vite example, which is deployed right now.

Motivation

Let the user configure more election settings to have a more complete demo of the SDK and protocol capabilities.

Proposal

Most important is the global bug we found which is fixed in the vite config but shouldn't. Then add more overall control for the demo, as create some check-boxes for secret/anonymous/ etc.

Also try to organize the UI a little better. Feel free. Tagging @jpaulet for some feedback.
