I would like to ask if can we use the previous uyuni-server release? Currently we are not very familiar with containers and would prefer to keep using the RPM version version for now.

Uyuni is free software, you can do whatever you want with it 😃 ! Just keep in mind that bug reports filed against older versions are not really useful and we will probably ask you to reproduce the bug with the latest available version.
