I was wondering if there were any tests in the repo? Having UI as a main interface for the dev teams, the automated tests are crucial to ensure that UI is stable and does not have any regressions.
Also, the description says:
Testing locally, the UI can be connected to production or development Lagoon instances. Here we have included the URLs for the amazee.io cloud, but you can substitute your own.
To me, this looks like a big blocker for contributions as not many people who could contribute would be able to use the DEV or own instance of Lagoon. Has it been considered to include a mock server with current Lagoon API config so that the UI could be working locally autonomously?

Yes - we are working on this (along with mocking) - we've provided the ability to connect to a prod instance - as we do not foresee people contributing that are not currently running a lagoon instance (either amazee.io or self-hosted)
