Custom save_dir on train

I'd like to specify a directory not defined by the incremental directory structure implemented here. Is there any reason I couldn't submit a PR to add it to the list of opts and rewrite this bit to check if it was user-specified? Otherwise I'm essentially stuck undoing this incremental saving after training with other file ops. Do other parts of the code require this incremental structure?
