Update to the latest reworked docker image from nixos team. When first released, there were issues with many missing tools and default folders. We need to test it and adapt the Dockerfile for this new image.

This could depreciate #114 as the new docker image is multiarch, and we would be able to use one Dockerfile for building both architectures.
