Subject: [PATCH 1/2] docs: document env vars in readme

- explain `W3_PRINCIPAL`, `W3_STORE_NAME`, `W3UP_SERVICE_URL` and `W3UP_SERVICE_DID`
- remove beta warning. we prod now.
