Whenever a branch or tag is considered stale by Git, it is not being fetched by the "git for-each-ref" command.
This means that whenever a branch or tag is older than 3 months the versions are not available anymore in the documentation.

I cannot find any git (not GitHub!) documentation which would suggest such behaviour. You surely mean that GitHub (not git!) considers branches and tags as stale after 3 months of inactivity, right? Running git fetch --all before sphinx-multiversion should fetch them in that case. If not you'd need to provide us with a reprex (reproducing example) or if possible a MCVE.
