Possibly adding an option to use stenv in a docker container

Hey guys, just starting to play with stenv and thought it may be a good idea to give the people the option to play with the environment through a docker container. I think astroconda used to have something similar, or at least a build environment container.

I've made something that may work: github.com/amanchokshi/stenv-docker which also has jupyter notebook and jupyterlab functionality built in.

Great idea! I don't have Docker on my work machine so can't test on MacOS at the moment, but the Dockerfile looks simple enough. There are a few improvements I could suggest; I will make a PR or two

Fantastic! There were a couple of small bugs, but it's all fixed and merged into main. Hadn't heard of mamba before, but it seems amazing
