Fold in bug fixes

Description

Fixed handling of license files:

• fixed bug around accessing undefined object ([Bug]: license_file_paths accessed when None #31)
• added COPYING as a possible license file name ([Bug]: COPYING licenses not recognised #30)

Automated testing in GH actions, manual testing in local dev environment as described in the README.
