The issue where RHOAI breaks if service mesh is not fully installed is supposedly fixed as of this issue:

https://issues.redhat.com/browse/RHOAIENG-15227

We should be able to test removing this from the config:

https://github.com/redhat-ai-services/ai-accelerator/tree/main/components/operators/openshift-ai/instance/components/wait-for-servicemesh
