Savory Roasted Garlic and Lemon Spread

A rich and aromatic spread made with roasted garlic, lemon, olives, and nuts. Recipe Source

Ingredients

  • 1 bulb garlic, for baking
  • 3-4 lemon slices, for baking
  • 2 tbsp capers
  • 1 cup green olives
  • ½” thick slice red onion
  • 1 fresh garlic clove
  • ¼ cup pistachios, soaked
  • ¼ cup raw cashews, soaked
  • ½ cup water
  • 2-3 tbsp white wine
  • ⅓ cup + 2 tbsp olive oil
  • ½ tsp cracked black pepper
  • 2-3 tsp agave nectar or maple syrup
  • ½ tsp chili flakes
  • 1½ tbsp lemon marmalade
  • ¼ cup fresh coriander leaves, chopped
  • 1 tbsp fresh lemon juice
  • 1 tsp kosher salt

Instructions

  1. Bake Garlic and Lemon: Bake a bulb of garlic and lemon slices at 375°F for about 1 hour and 45 minutes, respectively.
  2. Roast Ingredients: Roast capers, olives, and red onion for 50 minutes.
  3. Blend Mixture: Once cooled, blend the baked and roasted ingredients with soaked nuts, water, white wine, olive oil, pepper, sweetener, chili flakes, and lemon marmalade until desired consistency.
  4. Add Final Touches: Stir in chopped coriander, lemon juice, and salt. Adjust seasoning.
  5. Chill: The spread will thicken slightly as it chills.
