- 1 bulb garlic, for baking
- 3-4 lemon slices, for baking
- 2 tbsp capers
- 1 cup green olives
- ½” thick slice red onion
- 1 fresh garlic clove
- ¼ cup pistachios, soaked
- ¼ cup raw cashews, soaked
- ½ cup water
- 2-3 tbsp white wine
- ⅓ cup + 2 tbsp olive oil
- ½ tsp cracked black pepper
- 2-3 tsp agave nectar or maple syrup
- ½ tsp chili flakes
- 1½ tbsp lemon marmalade
- ¼ cup fresh coriander leaves, chopped
- 1 tbsp fresh lemon juice
- 1 tsp kosher salt
- Bake Garlic and Lemon: Bake a bulb of garlic and lemon slices at 375°F for about 1 hour and 45 minutes, respectively.
- Roast Ingredients: Roast capers, olives, and red onion for 50 minutes.
- Blend Mixture: Once cooled, blend the baked and roasted ingredients with soaked nuts, water, white wine, olive oil, pepper, sweetener, chili flakes, and lemon marmalade until desired consistency.
- Add Final Touches: Stir in chopped coriander, lemon juice, and salt. Adjust seasoning.
- Chill: The spread will thicken slightly as it chills.
