Support for connecting to localstack's Kinesis locally.

Is your feature request related to a problem? Please describe.
I am trying out data prepper in local and comparing the filtering/processor functionality between logstash and data prepper. As part of my test setup, I would like to connect the data prepper to have local kinesis stream as source. Currently, I don't see any option to manipulate the kinesis endpoint and port in Kinesis source.
