I discovered them when adding in the generic colors to the tailwindcss config.
I SUSPECT that the desired behavior is for them to be neutral-500 but am not sure.
if you want a PR subbing the gray-500 color references to neutral-500, I'm happy to do so... but don't wanna submit without checking if thats what you had in mind.

@nunocoracao - there are several references to the (nonexistent) gray-500 color in the theme atm:
