[1.21] Fix transforms for modded ItemDisplayContexts being ignored

This PR fixes transforms for modded ItemDisplayContexts specified in item model JSONs being ignored. The patch for this was lost in the 1.20.2 update. The fix is intentionally different from the old implementation in 1.20.1 as that implementation completely ignored the optional fallback type that can be specified for modded ItemDisplayContexts.

MDK installation

In order to setup a MDK using the latest PR version, run the following commands in a terminal.
The script works on both *nix and Windows as long as you have the JDK bin folder on the path.
The script will clone the MDK in a folder named NeoForge-pr1164.
On Powershell you will need to remove the -L flag from the curl invocation.
