I would like to run this game at LAN parties, but I would really like it if I could have the server and client as two separate processes. Would it be possible to implement a --dedicated launch option?
This would disable graphics and immediately start a server to play on. Then users can connect an the IP address.

Hi! At the moment this is not possible due to how the game works internally, but it is certainly a valid feature request.
Also note that the built-in online multiplayer is pretty experimental at the moment. If it is a valid alternative, I'd recommend game streaming for multiplayer; you mentioned LAN parties, so Moonlight + Sunshine could work there with low latency.
