It would be great if we had a option to set the php version to whatever the max supported version is in drupal core. Like right now we have a switch for PHP 8.1 but Drupal 11 requires PHP 8.3 and I'm unsure how to test to make sure code is compatible.
If finding the max version is too complicated then maybe a option that supports a value such as --php=80300
