Gatsby Analytics

It would be nice if we could track traffic to the site and user engagement in a privacy-conscious manner, i.e. meaning no Google Analytics.

Some of the options up for consideration can be found on the official Gatsby website here, but the only one I am really interested in is Matomo because it is completely free and open-source. The software can be ran on my Raspberry Pi (source) server without introducing too much friction (in theory), so that might be the best way to go on this.

Open to suggestions if anybody has any though!
