It would be awesome to include FSR and CAS support directly on the captured image making sunshine even better on all graphic cards and all moonlight clients. Just imagine being able to run a game at 720p for a performance boost and see it even better when streamed by Sunshine than when looking directly at the native display : )
This could also be implemented in moonlight clients for example to reduce bandwidth requirements, but realistically not all client devices have access to FSR, and they are too many clients, so at the end of the day, I strongly believe the best place to implement this is at server side (sunshine). Also this would pretty much render native NVIDIA experience server useless even in Windows, making Sunshine a much more appealing option even for Windows/NVIDIA users.
By the way AMD has just launched a patent for FSR AI upscaling, so the future of this is even brighter.
