Request: Document supported fields in .evans.toml file

The .evans.toml configuration file is useful for projects that store or document gRPC services. However, there is almost no documentation about its expected structure. The README of this project only includes one section and three fields, missing most of the supported config functionality.

I request that the example .evans.toml be expanded to include all supported fields.
