Turkey Brine

  • 6qt water
  • 1lb kosher salt
  • 1 c molasses
  • 2c Honey
  • 1c soy sauce
  • 1 tbs dry sage
  • lrg bunch fresh thyme
  • 2 whole heads garlic/cloves crushed
  • 5lb ice
  • 14-18lb bird large container (like a 5 gallon bucket)

3qrt water + salt, bring to boil

next 6 ingredients , mix well other water

fill bucket + turkety breast side down ; add ice, fridge (or cooler or matintain wth block of ice)

12+ hours

I add butter room temp plus favorite spice (Ms dash + lawarys) for roaster or smoke/general rub for smoker.
