- 2 large eggs
- 1 cup Italian style bread crumbs
- 3/4 cup grated Parmesan cheese
- 4 boneless pork loin chops, 3/4 inch thick
- Salt and pepper
- 3 tablespoons olive oil
- Whisk eggs in 1 bowl, in another bowl put the bread crumbs, in the next bowl put the parmesan cheese
- Sprinkle chops with salt and pepper
- Coat each chop with cheese, then egg wash, then bread crumbs
- Heat oil in large skillet over medium heat, cook chops about 6 min. per side. Center must reach 150F OR
- Bake in oven for 25 min at 425F
