It appears that there is some configuration in the cantaloupe docker container that prevents the logs from getting forwarded to the proper place. The end result is that, in the cloud systems, we are unable to get cantaloupe logging information forwarded to graylog.
We thought, initially, that it was a permission error, but it seems deeper than that and was not a quick thing to troubleshoot.
The logging seems to work fine in the development environment, so this is just a cloud issue.

@bbranan This is also something to decide on. Lack of cantaloupe logging make troubleshooting issues difficult. GIven our lack of resource, I've marked this as a vendor ticket, although it might be worth saving it for LAG.
