would it be possible to have a docker image?
Something like https://hub.docker.com/r/mailhog/mailhog for mailhog?

Maybe you'll find it interesting, but I took the liberty to create a Docker version here: https://github.com/Qonstrukt/mailocal-docker

Do with it whatever you want. 😄

I used the git-master version as it has the required allowed_hosts option for the mailserver, otherwise you won't be able to send mail to it from another container.
