Requirement

Currently, default tag for jaeger jaegertracing/all-in-one image in jaeger helm chart is latest. Instead, it should point to a versioned tag (like 1.52.0)

Problem

latest tag is not a good practice. For us, it is not easy to do security scan. One exact version is expected instead fo latest.
