Maybe with a git submodules of the demos repository in the content folder?

Before doing that it may be worth finding a way to install hyperspy by default - see https://jupyterlite.readthedocs.io/en/stable/howto/pyodide/packages.html#bundling-additional-packages-by-default and https://jupyterlite.readthedocs.io/en/stable/howto/xeus-python/preinstalled_packages.html
