Remove Kafka and other unused packages and related changes

1. Uninstall Kafka and other packages - [ Separate PR ]
2. No need for 2 docker-compose files after Kafka is removed. we can get rid of both and check in the docker-compose file [ Separate PR ]
3. No need for a 2 .env sample file. Keep only the .env file and remove the other one
4. Keep only one .env file at the same level as docker-compose. No need for .env file inside the server and an update read me accordingly [ One PR for 3 and 4]
5. Update Read.me - Remove any mentions of Kafka and the .env file inside server [ Separate PR ]
