Preferred applications

Create a place holder action hidden by default for the default application, such action will be used by the File menu and the context popup menu. When a file is selected the action is configured with the name and icon of the default application and the action is turn visible. An "Open With" submenu with alternative applications must be created and also an item that opens a dialog from which the user can choose an appropriate application and save it as the default application for the MIME type.
